A Banana Pancake Recipe The Whole Family Will Love

How many times have you had bananas go bad right after you have purchased them. Sometimes it is hard to use them up and not get sick of the flavor. Over ripe bananas taste terrible so using them in a delicious manner is a little difficult. They can be made into bread or muffins but what if you do not have the time for that. Instead make a banana pancake recipe that will only take a little bit of time and a few other ingredients.

Once bananas start to turn brown and get spots it will not be long until you have to throw them away. This is the time that is perfect for making banana pancakes. If the banana inside the skin has turned black or brown you will want to cut those parts out and only use the banana that is white or yellowish. If the consistency seems to be a little soft, that is okay because it is perfect for this recipe.

This recipe requires two medium bowls. In the first bowl mix together 1 cup all purpose flour, 2 teaspoons baking powder, 1 tablespoon sugar, and 1 fourth teaspoon salt. Once they are well combined you set this bowl aside.

In the other bowl break one egg and beat it. Add one cup milk and two tablespoons of vegetable oil. Take two over ripe bananas and remove the peels. Mash the bananas in a cereal bowl until it is well mashed. Add it to the egg and milk mixture and using a kitchen whisk combine very well. Add some of the flour mixture to the egg mixture and mix well. Keep adding the dry ingredients little by little until it is all incorporated. You might have to switch to a spoon to stir if the lumpy batter gets too heavy.

Heat a skillet on the stove and add a little vegetable oil to the bottom. Take about one fourth cup of the batter and pour it into the skillet. Once the one side gets brown turn it over for the other side to brown as well then remove to a platter and place a little bit of butter on top.

You can add a few things to the batter to make them more unusual and one thing is about 1 to 2 tablespoons of smooth peanut butter. Another is one fourth of a cup of mini chocolate chips. Another variation is to add one fourth cup of sliced strawberries.

You can use syrup on top of banana pancakes but there are other things you can do too. Try just some whipped cream on top. Pour some fudge sauce or chocolate syrup over top or try some caramel sauce usually used to top ice cream. Honey tastes great on banana flavored pancakes. You can make these any time of the day. They are good for breakfast for lunch or make a special dessert during the evening.
